Funfetti Pound Cake

It shouldn’t be news that I am in love with pound cake.  I love everything about it.  Even the large quantity of eggs and calories that make it taste so darn good.  We devour our Grandmother Paul’s Sour Cream Pound Cake every time we make it.  We gobbled up the Trisha Yearwood’s Chocolate Pound Cake.  How can those be topped???  How about with Funfetti Pound Cake?!

Nut how is this different from all the other pound cakes out there, you are asking.  This IS different.  It has a tub of frosting in the cake.  Yep, you read that right… in the cake!  Strange, right?

I wasn’t quite sure what to think about this the first time I saw this post over on Mrs Happy Homemaker.  But I was intrigued.  I mean, how can you go wrong with cake and frosting!  But I had to find out for myself.

Funfetti Pound Cake

* 1 box of cake mix (Funfetti for this recipe – but you can use any flavor)
* 1 tub of frosting (funfetti or any flavor)
* 4 eggs
* 1/2 cup vegetable oil
* 1 1/3 cups water

Mix all of the ingredients except the frosting with a mixer.

Gently stir in the tub of frosting.  (I was nervous at this point and wasn’t really sure how this was going to turn out.)

Spray a bundt pan with non-stick spray (I use the kind with flour because it rocks.)  And cook in a 350 degree oven for 50 – 60 minutes.

Remove to a wire rack and let cool for about 10 minutes.  Then invert it onto the rack and cool another 10 minutes before cutting.

OH MY GOSH!  It was amazing.  And so easy to make.

And it was so moist!  I will be making this one again and again!

  7. Yum, everything is more fun when it’s funfetti isn’t it! What a yummy looking cake. Unfortunately here in the U.K, they’ve decided to restrict the artificial colours that can be used in sprinkles/jimmies which resulted in me having to make a funfetti birthday cake 11 different times last summer because every time I baked with different sprinkles all the colour disappeared!! Eventually I had to order some U.S sprinkles off American ebay and they did bleed into my cake! That is why my life would be so much easier if I just lived in America! haha

  21. Just made this and it is amazing. A word of caution, really spray your bundt pan. If you don’t your cake may stick to the pan! I will definitely make this again!
