Margarita Breakfast Pizza

My friend Trish contributed this amazingly delicious recipe for our Egglands Best Egg-Spect the Best Brunch.  How yummy does this look?!?!  I’m all about breakfast pizza!  BTW – have you entered the giveaway here yet from Egglands Best Eggs?
Margarita Breakfast Pizza
(from my co-worker Trish)
* 1 (12 inch) prepared pizza crust
* 1/4 cup crumbled bacon (I cheat – I use the real crumbled bacon from Costco)
* 7-8 eggs
* 1/2 cup milk
* 1 1/2 Tablespoons chopped green onion, divided (it actually calls for basil but my family is not a fan)
* 1/8 teaspoon black pepper
* 2 plum tomatoes,thinly sliced
* 1/2 cup (2 ounces) shredded mozzarella cheese
* 1/4 cup (1 ounce) shredded Cheddar Cheese
1. Preheat oven to 450 degrees F.   Place pizza crust on 12-inch pizza pan. Bake 6 – 8 minutes or until heated through.
2.Meanwhile, coat large skillet with nonstick cooking spray. Cook bacon over medium-high heat until crisp (if not using already prepared version). Remove from skillet to paper towels; cool.  Crumble bacon.
3. Combine eggs, milk, 1/2 teaspoon onion (basil) and pepper in medium bowl. Coat same skillet with cooking spray. Add egg mixture. Cook over medium heat until mixture begins to set around edges. Gently stir eggs,allowing uncooked portions to flow underneath. Repeat stirring every 1 to 2 minutes or until eggs are just set. Remove from heat.
4.Arrange tomato slices on warmed crust. Spoon scrambled eggs over tomatoes.  Sprinkle with bacon and onion and top with cheese. Bake 1 minute or until cheese is melted. Cut into six wedges. Serve immediately.
